Coconut Green Chutney

Procedure

  1. In the jar of a blender or bowl of a food processor, place the coconut and add the hot water. Let the coconut soak for about 5 minutes while you prepare the other ingredients.
  2. Add the garlic and chile to the blender. Add the cilantro, mint, lemon juice, and an additional ¼ cup of water. Blend at low speed, stopping the blender occasionally to tamp down the ingredients. Add water sparingly to keep the contents moving, as needed.
  3. Once the contents are moving freely, turn the blender to high and process until the chutney is puréed
