Coconut Green Chutney

Ingredients
- ½ cup unsweetened shredded coconut (kokos rasp of reepjes)
- ½ cup hot water
- 6 garlic cloves, chopped
- ½ to 1 serrano or jalapeño chile, chopped
- 2 cups chopped fresh cilantro
- ¼ cup chopped fresh mint
- Juice of 1 lemon
- ¼ to ¾ cup water, as needed
Procedure
- In the jar of a blender or bowl of a food processor, place the coconut and add the hot water. Let the coconut soak for about 5 minutes while you prepare the other ingredients.
- Add the garlic and chile to the blender. Add the cilantro, mint, lemon juice, and an additional ¼ cup of water. Blend at low speed, stopping the blender occasionally to tamp down the ingredients. Add water sparingly to keep the contents moving, as needed.
- Once the contents are moving freely, turn the blender to high and process until the chutney is puréed
