Procedure

  1. Combine the onion, bell pepper, garlic, and chiles in a food processor or blender and process until smooth.
  2. Add the tomatoes, brown sugar, vinegar, salt, and oregano, and process until smooth. Transfer the mixture to a saucepan and bring to a boil.
  3. Reduce the heat to a simmer, and cook, stirring frequently, for 20 to 30 minutes, or until thick.
  4. The sauce can be used immediately or allowed to cool before covering and refrigerating.
