General
Source: Hungarian cookbook given by Hannah to Kanda and then (re)interpreted.
Ingredients
For the chicken dish
- 1 oven ready chicken (1.2 to1.3 kg = small chicken) or 4 chicken thighs plus 4 drumsticks
- 1 big onion, chopped
- 1 clove of garlic
- 2 tablespoons duck or goose fat (replace by butter or olive oil or bacon fat)
- 1 yellow paprika
- 2 big tomatoes
- 1 tsp paprika (not spicy)
- 1 tsp caraway (karwijzaad)
- 4 dl sour cream
- 1-2 small tbs flour (do not use in the Instant Pot)
For the dumplings
- 400 gr flour
- 2 eggs
- 2-4 dl milk
- 50 g butter
- salt
Procedure
Chicken dish
- It does not say in the recipe, but I would fry up the chicken pieces, seasoned with a bit of salt and pepper as a first step. Frying seals in the juices. When golden brown, set aside.
- Clean the pan, eat up the fat, add the chopped onion, and turn down the heat until the onion softens
- Off the heat, add the red paprika and the crushed garlic. Add a bit of water then boil together.
- Put all ingredients for the chicken dish into the instant pot, starting with the chicken pieces and ending with the paprika/garlic mix. NOTE: when using the Instant Pot, leave out the flour and use a thickening agent like corn flour afterwards, if necessary.
- Cook as a chicken stew
Dumplings
- Put the flour in a bowl
- Break the eggs into it
- Add salt
- Use your mixer attachment to whisk the egg into the flour slowly, or use a big wooded spoon (you will not be able to use your mixer at the end coz the flour mixture will become too dense). Do not try to mix all the flour at once, only a bit at the time. The egg will pick up a bit of flour every time, until the mixture gets too stiff. Then add a little milk; continue until the milk is finished and you have a soft lump-free mass. It should be a bit sticky but firm enough to cut into pieces. So don't use all the milk if you don't need to.
- Leave the mixture to rest for 10 minutes, and kneed it again. Refrigerate at this point, if making ahead.
- Boil a large pan with salted water
- Make sure you have a slotted spoon and a colander ready
- Using the side of a teaspoon, spoon up a bit of dough and put it in the water (spoon and all, the dough will come off). Repeat. You can also use a knife to cut pieces or a spatula. There are also other methods you can use to create the dumplings, see a video here: https://www.youtube.com/watch?v=6fgExMjs1Co
- The dumplings are ready when they float to the surface. Take out the ready dumplings with the slotted spoon and put them in the colander. Rinse with hot or cold water.
- When all the dumplings are done, toss them with butter, pepper and salt.
