Ingredients
- 3 large tomatoes, finely diced
- 6 scallions, ends trimmed, thinly sliced
- 3 tablespoons freshly squeezed lime juice
- 1 teaspoon minced ginger
- ½ teaspoon kosher salt
- Small handful of cilantro or parsley leaves, minced
Procedure
- Place the tomatoes, scallions, lime juice, ginger, salt, and cilantro in a medium bowl.
- Stir to combine, and let sit at room temperature for at least 20 minutes and up to 2 hours before serving so all the flavours have a chance to marinate together.
- Leftovers can be stored in a container in the refrigerator for up to 3 days (bring to room temperature and season to taste again before serving).
