Warm broccoli and halloumi salad

Ingredients for 1 person

Procedure

  1. Heat the oil in a pan or wok and throw in the broccoli.
  2. Cook for 3 minutes, stirring well, before adding the halloumi.
  3. Cook for another minute or so, still stirring, until the cheese starts to brown.
  4. Add the tomatoes and cook for a minute more.
  5. Take off the heat and add the mint sauce and balsamic vinegar.
  6. Enjoy while still warm.
