Radish with anchovy sauce
Ingredients
- 2 bunches radishes,
- tops trimmed and left on
- Sea salt and freshly ground
- black pepper
- 3 salt-packed anchovies
- 2 garlic cloves, peeled
- Pinch of crushed red pepper fl akes
- 1 teaspoon Dijon mustard
- 1 teaspoon red wine vinegar
- 1 teaspoon fresh lemon juice
- 1/4 cup extra-virgin olive oil
Procedure
- Rinse the radishes well, and pat dry. Slice them in half, arrange them
- on a platter, and sprinkle with salt and pepper to taste.
- Chop the anchovies, and put them in a bowl. Smash the garlic with
- the side of a knife, and add it to the bowl. Work the anchovies and
- the garlic into a smooth paste with a fork or the back of a spoon. Add
- the pepper fl akes, mustard, vinegar, and lemon juice, and mix well.
- Whisk in the olive oil. The sauce can also be prepared in a blender.
- Serve as a dipping sauce with the radishes.
