Orange cheesecake
General
- This is a no-bake cheese cake. Just take love and time.
- Preparation time: 45 minutes + 6 hours chilling
- Makes one 23-cm cake.
Ingredients
Biscuit base
- Butter 100 g, diced
- Digestive biscuits 170 g, fi nely crushed
- Brown sugar 2 Tbsp, fi rmly packed
- Cocoa powder 3 Tbsp, sifted
- Almond flakes 50 g, toasted
Filling
- Orange juice 125 ml, strained
- Powdered gelatine 1½ Tbsp, dissolved
- in 80 ml water
- Cream cheese 500 g, diced
- Castor sugar 120 g
- Orange zest grated from 2 oranges
- Lemon juice 1½ Tbsp, strained
- Thickened cream 400 ml
Procedure
Biscuit base
Prepare biscuit base according to separate recipe
Filling
- Stir orange juice into gelatine. Set aside.
- Beat cream cheese, sugar, orange zest and lemon juice until smooth.
- Pour in gelatine mixture and mix until combined.
- Blend in cream.
- Pour filling on biscuit base. Cover cake pan. Refrigerate
- overnight. Decorate cake as desired before serving.
