Nutty chocolate oatmeal
This is more like a breakfast or a brunch. Or perhaps late-night essay fuel.
Ingredients
- 1 cup steel-cut oats
- 2 tablespoons unsweetened cocoa powder, preferably Dutch process
- Pinch of salt
- 2 to 4 tablespoons nut butter (peanut, almond, or hazelnut are all great here), to taste
- Demerara sugar, coconut sugar, or light brown sugar
- Heavy cream, nut milk, or full-fat coconut milk, for garnish (optional)
- Flaky sea salt, for garnish (optional)
Procedure
- In the pressure cooker pot, whisk together 3 cups water, the oats, cocoa powder, and salt until all the cocoa powder lumps are dissolved.
- Lock the lid into place and cook on high pressure for 9 minutes. Let the pressure release naturally for 10 minutes, then manually release the remaining pressure.
- Stir up the oatmeal, then stir in the nut butter and sugar to taste. Garnish with cream, nut milk, or coconut milk, and a sprinkle of flaky salt if you like.
