Andijvie stamppot

Preparation time: 5 minutes if you can get the endive pre-washed and sliced.

- Endive is difficult to get in the UK. Waitrose may have it: https://www.waitrose.com/content/waitrose/en/home/recipes/food_glossary/endive.html. Often other plants are sold as endive, particularly chicory which is a complete different vegetable. But you can substitute spring greens or rucola or leeks or even paksoi. However, the typical "andijvie" taste only comes from true endive.
- You will save yourself a lot of time if you buy the onions ready sliced!
- Andijvie stamppot does not freeze well. It can be reheated once (like spinach)
- If you use all the options (cheese and bacon) you may not need extra meat.
- For a vegetarian version, use sliced mushrooms rather than bacon. Take a a little longer to fry.
Ingredients
- 400 gram washed and sliced endive. If you bought whole endive, then you must slice it first, then rinse it at least twice to get the soil off.
- 400 gram peeled potatoes
- 200 gram sliced onions (or more if you prefer)
- 2 tablespoons of butter plus extra
- optional: 100 - 200 gram bacon
- optional: 100 gram cheddar, cut in cubes
Procedure
- Put the endive and a little water in the Instant pot and cook on high for 1 minute. Quick release. Put the endive in a sieve to let it drain off as much liquid as possible. Cover to retain heat.
- Gently fry the onions in butter on low heat until they are glazed and a bit sweet. Set aside
- Put the potatoes in the Instant pot. Cook on high pressure for 6 minutes. Quick release.
- Optional: Cut up the bacon in small pieces, preferably small cubes and fry. Set aside, including the bacon fat.
- Mash the potatoes, adding some extra salt and pepper to taste and extra butter. If you need more liquid, add a bit of water or milk. Do not use too much liquid.
- Mix potato and endive mixture using a big spoon. Taste, season again if necessary.
- Mix in the onions or serve separately
- Optional: mix in the cubed cheddar
- Optional: top with the fried bacon pieces and the bacon fat.
