Toetje
- This is a layered dessert, which makes it look and feel and taste luxurious, but it is actually very simple and quick to make.
- Since you know exactly what goes inside, you can control all the ingredients and you can make the serving as big or small as you like
- Prepare ahead If you have a collection of small dishes, or small glasses, you can make these ahead. They keep for weeks in the fridge. They also freeze well.
- If you make it with a red jam and use vanilla in the cream, this dessert will be reminiscent of the Dutch "vlavlip". If you make it with mascarpone and digestives, it will be like a cheese cake.


Ingredients
- Cookies or cake (phosphate free or whatever type mum can have a little of)
- Yoghurt or skyr or mascarpone or a mix of these; unsweetened vegan alternatives based on almonds or soy also work great.
- Dairy or vegan cream
- Jam or chocolate sauce or thinly sliced fresh fruit or mashed soft fruit. You could even use baby fruit.
- Vanilla or cinnamon or lemon or coconut or a safe flavouring of your choice
- variation: decaf coffee granules, powdered cacao
- optional: fruit for decoration
Procedure
Create three different layers on top of each other in a glass. If you are feeling wild you can do 5 layers. Or 2. Or whatever.
- Bottom layer: digestive or cake, crumbled
- Middle: jam or chocolate sauce. You can also make an appelmoes or chocolate/coffee layer, see variations below, or layer thinly cut fresh fruit or banana. Or even jelly if you feel up to making that.
- Top layer: skyr or yoghurt, mix with cream until creamy. Sweeten with stevia (or fructose or honey or whatever you prefer to use). Add vanilla or cinnamon or lemon or coconut cream. Or a safe flavouring or syrup of your choice.
- Variation: mix mum's decaf coffee granules or some powder cacao with a few drops of water and add that to the cream. Use that as a middle layer, and make a vanilla top layer.
- Variation: add some appelmoes (see other recipe) and flavour cinnamon and nutmeg or all spice, and put real apple on the middle layer.
- Variation: mix some squashed banana into the top layer and add some vanilla or cinnamon and nutmeg
- Optional: put a fruit or a sprinkling of cacao on top to make it look nice.
