Carrots roasted with cumin and orange peel

Procedure

  1. Heat oven to 400°F /205 C.
  2. Spray 15x10x1-inch pan with cooking spray.
  3. In large bowl, mix carrots, olive oil, cumin, salt and pepper.
  4. Spread in pan. Roast 25 to 30 minutes, stirring halfway through, until browned and tender.
  5. Toss roasted carrots with grated orange peel and chives before serving.
